Hydrofoils

My 1969 Sportsman experiences cavitation on sharp turns at higher speeds.
I've seen ads for hydrofoils that claim, among other benefits, to reduce
cavitation. Anyone have any input to offer? If they are so good, why
aren't cavitation plates just made this wide to begin with?
